Ingredients:
- 180 grams crushed cookies (I prefer to use McVities Digestive Biscuits, or you can use graham crackers)
- 65 grams of granulated sugar
- 70 grams unsalted butter, melted
- 32 oz of cream cheese, softened to room temperature
- 230 grams of full-fat sour cream at room temperature
- 200 grams of granulated sugar
- 4 large eggs at room temperature
- 2 tsp of vanilla extract
Instructions:
- Start by preheating your oven to 325°F (160°C) and lining a 9-inch springform pan with parchment paper.
- Use a food blender or processor and crush the cookies.
- In a medium-sized mixing bowl, combine the cookies and 65 grams of sugar, and stir until well combined. Melt the butter, then add to the mixing bowl and mix until the crumbs are moistened. Scoop the mixture into the springform pan, pressing down firmly into one even layer. Bake for 10 minutes, remove, and set aside to cool slightly while we make the filling.
- Set a large pot or kettle of water to boil before starting the filling. (Trust this process)
- In a large mixing bowl, with a paddle attachment beat the cream cheese on low-medium speed until smooth. Add the sour cream and mix until both are fully combined, stopping to scrape down the sides and bottom as needed. Add 200 grams of sugar and the vanilla extra and mix until well combined.
- In a separate bowl, you will lightly beat the eggs. If you beat the eggs too much it can cause the cheesecake to fall or crack.
- Add the beaten eggs to the mixing bowl with the filling, and mix on low speed until just combined. Use a rubber or wooden spatula to turn the filling a few times, until everything is mixed…then set aside.
- Wrap the springform pan with aluminum foil, then place in a crockpot liner or oven bag and fold down the sides or tie them together.
- Pour this delightful filling into the pan and smooth it out so it’s one even layer. Tap the pan on the counter a couple of times (about 4) to bring any air bubbles to the surface. Take a toothpick and remove any air bubbles that surface, then smooth out again.
- Add the boiling water that was set aside to a roasting pan until about an inch deep. Carefully place the roasting pan onto the bottom shelf of the oven and then place the cheesecake on the shelf above that.
- Bake the cheesecake at 325°F for 60-65 minutes until the edges are set and the center is slightly jiggly still. Turn off the oven, leave the pan and the cake in the oven with the door slightly cracked. Let it cool in the warm oven for 1 hour.
- After one hour, remove the cake and place it on a wire rack to cool completely. Once cooled cover tightly and refrigerate for 5-6 hours or overnight.
